Savannah Smiles Zesty Lemon Streusel Bars

Crust Ingredients:

1/4 cup (4 Tbs) butter, softened
1/3 cup flour
1/4 cup powdered sugar
1/4 tsp lemon rind

Filling Ingredients:

1 large pkg (4.3 oz) lemon cook and serve pudding and pie filling
3/4 cup sugar
3 eggs
3 Tbs of lemon juice
½ tsp baking powder

Topping Ingredients:

1/2 pkg (about 14) Savannah Smiles lemon cookies, crushed
Powdered sugar (optional)

Directions:

1. Cream together all 4 crust ingredients with an electric mixer, until it forms into dough.
2. Spread the crust dough evenly into a 9”x9” pan.
3. Bake crust for 10 minutes in a 350 degree oven.
4. While the crust is baking, prepare the filling by combining all filling ingredients in a mixing bowl and mix with an electric mixer for about 2 minutes.
5. Remove crust from oven and immediately pour filling on top of hot crust.
6. Sprinkle the cookie crumbs evenly over the filling.
7. Continue baking the bars for 20 to 25 minutes in a 350 degree oven, until set.
8. Remove bars from oven and cool.
9. Dust with powdered sugar, if desired.

Yield 16 bars

Fried Samoas Shrimp

Ingredients

5 extra-large shrimp, peeled and de-veined
5 Samoas Girl Scout Cookies®, finely chopped
2 cups seasoned bread crumbs
2 cups flour
1 cup coconut flakes
4 egg whites
1 pinch cayenne pepper
1 lime for garnish
Vegetable or peanut oil for frying

Directions

Yields 5 shrimp
1. Toss coconut flakes with bread crumbs, cayenne pepper and chopped Samoas Girl Scout Cookies.
2. Dredge shrimp through flour, followed by egg whites and Samoas Girl Scout Cookies mixture.
3. Fry shrimp in vegetable oil at 350 degrees until golden brown.
4. Garnish with coconut flakes and lime wedges.

Serving Suggestions:

  • Serve warm.
  • Arrange in a star pattern on a salad plate, or on a bamboo skewer with tropical fruits.
  • Can be served as an appetizer, in a salad, or as an entrée.
  • If serving as an entrée accompany with fried plantains and wild rice.

Samoas Sweet Potatoes

Ingredients

1 box of Samoas® Girl Scout Cookies
3 lbs. sweet potatoes
1 tsp. cinnamon
1 tsp. ginger
1 tsp. nutmeg
1/3 lb. of butter
1/3 cup of mini marshmallows (optional)
Salt and pepper to taste

Directions

1. Preheat oven to 400 degrees F.
2. Bake sweet potatoes for 1 hour. Then, remove to cool and peel.
3. Turn oven temperature down to 350 degrees F.
4. Mash potatoes and add rest of ingredients. Season to taste.
5. Place mixture in casserole dish and layer with Samoas. Bake until cookies melt.
6. Top with mini marshmallows and bake until lightly brown.

Yields 4 servings

Berry Munch Bread Pudding

Ingredients

1 box Thank U Berry Munch Girl Scout Cookies
1/3 Cup cranberries (can be fresh/sliced or dried or Craisins)
2 eggs, slightly beaten
3 Tbs sugar
1 tsp vanilla
1 tsp grated orange peel
1/4 tsp cinnamon
1 cup milk
Vanilla Sauce:
1 small box “Cook & Serve” vanilla pudding
2 1/2 cups milk

Directions

Yields 6 servings

1. Preheat oven to 350°.
2. Break cookies into ½” pieces.
3. Grease the bottom and sides of a 1 quart casserole dish.
4. Place the Thank U Berry Munch cookie pieces in the bottom of the casserole dish
5. Sprinkle the cranberries over the cookie pieces.
6. In a mixing bowl beat the eggs with a fork, then stir in the sugar, vanilla, orange peel, and cinnamon.
7. Stir in 1 cup milk.
8. Pour the mixture over the cookie and cranberry pieces.
9. Bake for 30 minutes, until set.

Vanilla Sauce:
Prepare one box of “Cook & Serve” vanilla pudding as directed on box. Thin with 1/2 cup milk to make into a sauce.

Serving Suggestion:
Serve warm bread pudding with warm vanilla sauce.

Tagalongs Shake

Ingredients

1/2 box of Tagalongs® Girl Scout Cookies
6 cups of vanilla ice cream
1 cup of milk
1 can of whipped cream

Directions

1. Mix cookies, ice cream and milk in blender. Blend until desired thickness.
2. Serve in tall milk shake glass and top with whipped cream. Garnish with crumbled cookies

Yields 2 servings
